Mr. Acosta joined UCCI in January 2008 as a Hospitality Lecturer. In his current capacity he is leading and encouraging young Caymanians to explore their potential through a challenging and exciting programme to promote the development of the tourism industry in the Cayman Islands.

Mr. Acosta got his first taste of teaching in 1995 at Antonio J. de Sucre High School, where he was also promoted to Assistant Head of the Language Department in 1996.

In 2004, he joined the Sunshine Suites Resort, Grand Cayman (formerly Wyndham Sunshine Suites) as the Executive Chef. He also worked with Premier HR Management Solutions as a Coordinator/head instructor for their Languages Tutoring Center division. He’s held a variety of Executive Chef’s positions from 2000 and worked with top establishments such as Shangri-La Hotels, Regal Hotels, Century Hotels and Barcelo Hotels in Asia.

Mr. Acosta is currently studying for his MBA at the University of Wales and his Certified Hotel Administrator (CHA) certification. He also holds a Degree in Education (Languages Specialist) from the University of Havana and several certifications from prestigious hospitality organizations such as Certified Chef de Cuisine (CCC), ServSafe Food Protection Manager, Servsafe Alcohol Certification, Certified Food and Beverage Executive (CFBE), and Foodservice Management Professional (FMP).
