Ms. Appelqvist joined the UCCI team full-time in 2007 after having
taught Spanish and English part-time at the University College since
October 2004. She graduated from the University of Florida with
a BA in Education and then moved to the Boston area to teach. Several
years went by and her appreciation for international travel and
diverse cultures led her to embark on a different career. Employed
by Pan American World Airways, she flew to five continents and many
of the world’s capital cities and other “off the beaten
path” destinations.
Ms. Appelqvist did not stay far away from the classroom during
those years, however. While flying, she completed a fifth year of
college study at San Francisco State University. She later returned
to teaching, and earned her Master’s degree in Curriculum
and Instruction at Portland State University.
A veteran volunteer with the Cayman National Cultural Foundation,
she was nominated Volunteer of the Year in 2007 and received that award in 2008. She is also a charter
member of the Grand Cayman Toastmaster’s Club and has had
the pleasure of seeing several of her students join this worldwide
organization.
